My First Week of Whole30

Good Morning!

Still working on getting used to blogging every day. Part of what distracted me last week was a visit to the doctors office. I’ve been having knee pain for a couple of months now but figured it was simply too busy. However, I finally got over my stubbornness and went to the doctor. I have Petitular Tendonitis. Luckily its not torn but it may take a while to heel since I can’t exactly rest it completely for six weeks since I’m a server. Currently I need to ice it every day, wear a brace, take anti-inflammatory medication and take out all lower body workouts. The only cardio I can do is swimming. Hopefully I heal quickly!

On a more positive note, I am really enjoying Whole30. It’s only been a week but I think overall this is a really great program. And I’m also enjoying some REALLY delicious foods!!

This amazing salad with Romaine, Watercress, Celery, Cucumber, Tomatoes and Purple Potatoes topped with Primal Kitchen Ranch Dressing. This dressing is one of my favorite new things. It’s SO delicious and amazing that there is no dairy since its so creamy!


Tuesday is when I went to the doctor so I didn’t go to the gym and just came home to rest my knee. I did make a delicious dinner (I can’t stay in bed ALL night :-P). I was inspired by a recipe in the Whole30 Cookbook and made this delicious meal. Crispy Cod with Mashed Potatoes and Sautéed Spinach. Simply and declicous


I’ll highlight two additional meals that were pretty amazing from this week (don’t want this post to be super long with EVERYTHING I ate over the week :-P)

When I was a kid, steak and eggs was one of my favorite meals. In fact I remember my Mom making me steak and eggs before I took the SAT’s. I haven’t really had it as a meal in years since I was worried about fat (silly Jessica). Well now with Whole30 I am throwing all of that away to create Food Freedom. So I made this delicious meal! Pan-Seared Steak cooked MR with Eggs, Asparagus and a Mixed Hash (sweet and white potato). WOW seriously so amazing. I could eat this breakfast every day 😛 (although I feel I’m saying that with so many of the meals I’m having)


And finally this gem. The real star of this dish are the Potatoes and the sauce on the Steak. I’ll start with the potatoes. They are Mashed Potatoes with Caramelized Onions, Garlic, Bacon and Chives. I caramelized the onions in the bacon grease which just adds that extra level of amazing deliciousness.

The steak is topped with a homemade Chimichurri. Basically olive oil, red wine vinegar, cilantro, garlic, lime, salt and pepper. Delicious, easy and keeps in the fridge for a while which is great! And then green beans on the side which are my favorite vegetable
